Does Facebook/Twitter/Yahoo sign up limit my ability to collect personal infornation?
And if I just go with Ning sign up, what % of users will I lose

I don't think so. There is only one oddity related to this: Facebook has a feature whereby one of their users can sign up but not share their email address. This is kind of a hidden feature of Facebook, so except for those rare occasions, you'll get all of the usual info.

How does that work? Can I see Facebook users' emails, name, etc.? Where? Sorry, this is all a bit new to me but it is important that I get this right.

You can see Facebook users email. It kind of works like this. It's quite rare. In most situations, you'll have the email address.
