How can I customize submenus?

The submenus on this site look pretty cool - I like the space between the actual menu item, and the submenu itself. I also like have the submenus on here look like separate funds when the sub menu drops down. Mine looks like one large block. Any way to customize these little things on my site?

I also want to customize my colors further than is allowed. For example the background color on my main menu is a custom blue, but that color blue is not an option when setting the background colors on my submenus (the blue is either too dark or too light).

Any tips anyone can provide and tinkering with the submenus, would appreciate it!
