More Info on Members

Our Ning site is a paid "subscriber only" site. I need to gather more information on my members for billing purposes. So far, the only way I see to do this is to add more profile questions and make everything but city, state/province, and country private to the network. Does anyone have a better solution? 

Also, where can the admin find the email address of the members? They're required to use it to sign up but I have not been able to find where this information is located.

You can also go to My Network -->Members--->Management and see their emails there.
