Hope you all had a great holiday!
I am trying to freshen up my 2.0 and I have looking at my Categories section on my main page and I am wondering is there a way to add some sort of graphic or photo link? or something other then just the words-Category Title?

Unfortunately, there is no inbuilt function for this but you can use the script :-)
Here is how it looks on my test network, I didn't change any styles it anything else to make it look better, and the picture as you may see just the random one taken from the net, however, if necessary you can use some styles or explain me a bit how do you see all this so I could add necessary styles.
Here is the code used:

In order to place the picture on the right place you should replace the first link adn teh second link with the link that you can get if you click on the category name on the page from the screenshot. Example, I have 3 categories test1, test2, test3. If you right click oneof them and press copy the url of the link you would get the appropriate url that should be inserted insted the link 1 and 2 in teh code.
The third URL in the code is the link to the picture that would be placed before teh category.
The code should be used for each category separately if you need to remove the native link to the category (under the native link I mean the name of the category which is shown by default) you can add just before </script> the following line of the code:
x$('h3 > a[href*="https://kyryltest.ning.com/forum/categories/test1/listForCategory"]').remove();
The link here should be same as the link 1 and 2.

Yes you can easily customize the forum categories inside the dashboard (signed in as creator) just create your HTML for each category and plug it inside the dashboard page where you chose the forum categories
I have customized mine here but you'll need to be a member to get past the first page
